Cat's Pimiento Cheese
1 c. grated cheddar (I use mild)
1 c. Monterey Jack cheese
1/2 c. mayo
salt, pepper, garlic (I use 1/2 t. combined total)
3T pimientos
1 t. grated onion
cracked black pepper
Mix everything together and plop on the top of crackers or spread on a sandwich. If you're a true Southerner, cut off the crusts!
Notes:
- The original recipe also calls for 1 3oz package cream cheese (room temperature). I leave that out.
- I like the fine cheddar (the thin pieces rather than thick) which changes the texture a bit.
